Ingredients:
¾ c sweetened condensed milk
¼ tsp almond extract
1 ½ tsp vanilla extract
¼ tsp fine salt
1 large Egg white
3 c shredded unsweetened coconut
1 (4 oz) bar semisweet chocolate, chopped, or to taste
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
In a mixing bowl, add almond extract, condensed milk, egg white, salt, and vanilla extract. Stir until well mixed.
Add 2 ⅓ cups of shredded coconut, then stir everything until well mixed.
Shape the mixture into small balls. I usually use an ice cream scoop.
Add the rest of the shredded coconut onto a clean plate. Roll each ball into the coconut. Make sure to coat each well.
Arrange the balls onto a baking sheet lined with silicone.
Place them inside the preheated oven and bake for about 20 minutes or until they turn golden brown.
Remove from the oven and allow them to cool at room temperature.
Melt ¾ of chocolate in a double broiler. Make sure to stir from time to time until melted completely.
Add the rest of the chocolate and stir until melted completely.
Coat each macaroon with the melted chocolate.
Arrange them onto parchment paper. Let them rest for a couple of minutes until the texture becomes hard.
