Ingredients:
1 ½ pound boneless, skinless chicken breasts, cut diagonally into cutlets
3 tablespoons grapeseed oil
flour, for dredging
salt and pepper, to taste
For the Mushroom Sauce
8 ounces mushrooms, cleaned and thick-sliced
1 medium onion, thinly sliced
2 tablespoons butter
½ c white wine or chicken broth
1 c heavy cream
½ c shredded Parmesan
salt and pepper, to taste
Directions:
Step 1: Use a meat mallet to pound the chicken breasts.
Step 2: Season the chicken breasts with salt and pepper.
Step 3: Put the flour into a bowl and coat each chicken breast with it.
Step 4: Place a large pot on the stove and turn the heat to medium.
Step 5: Add oil and allow it to become hot.
Step 6: Add the chicken breasts in batches. Cook each side for a few minutes until golden.
Step 7: Remove the chicken from the pot to a clean plate.
Step 8: In the same pot, add butter and allow it to melt, then add the onion. Sauté until caramelized.
Step 9: Add the wine and mushrooms. Stir and cook until the mushrooms are soft. Make sure to scrape the bottom to get the brown bits.
Step 10: Season with salt and pepper to taste.
Step 11: Add Parmesan cheese and cream. Stir until well blended.
Step 12: Put the chicken back to the pot and turn the heat down to low.
Step 13: Toss until the chicken pieces are well coated with the sauce.
Step 14: Serve hot and enjoy!
