Ingredients:
2 c flour
¾ c sugar
1 ½ tsp baking powder
¾ tsp salt
½ tsp baking soda
¼ c butter, cut into small chunks
¾ c orange juice
1 tbsp grated orange zest
1 Egg, beaten
1 c chopped cranberries
½ c chopped walnuts (optional)
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Apply cooking spray in eight ½×4 ½-inch loaf pan.
Step 3: In a large mixing bowl, add the flour, baking powder, baking soda, sugar, and salt. Stir until well mixed.
Step 4: Add in the butter and stir until well blended.
Step 5: Add the egg, orange zest, and orange juice. Stir until well mixed.
Step 6: Add the walnuts and cranberries. Stir until well combined.
Step 7: Transfer the batter into the greased pan.
Step 8: Place the pan inside the preheated oven and bake for 60 to 75 minutes or until a toothpick comes out clean after inserting it in the middle.
Step 9: Remove the pan from the oven and let it sit at room temperature to cool.
